Brisa Santoku Chef Knife with Mustard Micarta Scales
The blade is made in Europe by Finnish brand Brisa in Swedish 12c27 steel, a popular stainless steel for chef knives.
The blade is 47 mm high, about 2.5 mm thick at the spine and has 185 mm of blade.
Total length is 305 mm including handle, the scales are in Mustard coloured Micarta.
This blade really feels like a quality tool with good weight distribution and a business edge on it.
The Santoku knife is the Japanese version of the Western general use chef's knife.
The santoku is excellent for chopping vegetables and the wide blade works well for scooping sliced food off a cutting board.
